Не многие знают, что мясо кабана содержит витамины группы В, Е и РР, кальций, натрий, калий, железо, селен, фосфор.

В нем содержится большее количество белка и меньшее жира, чем в свинине.

Мясо кабана диетическое и усваивается организмом на 90 %; к тому же в нем есть полезные антиоксиданты.

Сейчас в самом разгаре разнообразные охоты на кабана, и тем, кому посчастливилось добыть этот замечательный трофей, я представляю на суд несколько рецептов, которые пользуются заслуженной популярностью.

Кабанья нога в пиве

Рецепт прост и в то же время необычен. На кабаньей лопатке сделать надрезы, посолить, в прорези положить свежий чабрец и намазать все смесью растительного масла, горчицы и чеснока. Убрать в прохладное место минимум на 6 часов или на ночь.

На противень с мясом налить 200 мл светлого пшеничного пива, накрыть фольгой и поставить в духовку на полтора часа при температуре 200°. Затем убрать фольгу, удалить излишнюю жидкость, снова намазать ногу смесью горчицы, меда и масла и ровно 30 минут запекать при 200°.

Образовавшаяся в процессе запекания сладкая хрустящая корочка сведет с ума любого гурмана-
мясоеда.

Борщ из кабана

Когда хочется первого блюда, то сытный, наваристый борщ из кабана будет вне конкуренции. Для него понадобятся следующие ингредиенты: мясо кабана — 0,5 кг; капуста — половина кочана; картофель — 2 шт.; морковь — 1 шт.; лук — 1 шт.; свекла — 1 шт.; пол-лимона.

Мясо порезать на порционные кусочки (кому как нравится) и варить 40 минут. За это время шинкуем капусту, картошку, лук, морковку и свеклу. В поджарку из моркови, свеклы и лука обязательно нужно добавить лимон, он даст кислинку бульону и вытащит максимум цвета из
свеклы.

В бульон добавляем капусту, через 15 минут поджарку и через 10 минут картошку. Зелень и лук с салом подаем к горячему готовому блюду.

Кабанчик с овощами

Как приготовить кабана вкусно, сытно и так, чтобы всем понравилось? Представляю вам еще один беспроигрышный вариант. Когда очень хочется летнего настроения, витаминов и насыщенного вкуса, я тушу кабана с овощами. Для этого понадобятся:

• мясо молодого кабанчика — 1,5 кг (сегодня это филе с лопатки), можно использовать любую часть;
• картофель — 1 кг;
• морковь — 2 шт.;
• томат — 2 шт.;
• перец болгарский — 1 шт.;
• лук синий и белый — 2 шт.;
• кабачок — 1 шт.;
• грибы лесные или шампиньоны — 0,5 кг.

Мясо промыть, замариновать по вкусу (у меня паприка, перец молотый, соль), достаточно двух часов. Овощи крупно нашинковать, посолить, поперчить и смазать оливковым или любым растительным маслом. Противень также смазать маслом, в середину положить мясо, по периметру — овощи и, накрыв все фольгой, тушить 45 минут в духовке при 200°.

Далее снять фольгу и тушить еще 40 минут. Сытный мясной обед готов, да его и к праздничному столу подать можно — остальное на столе нетронутым останется.

Лодочки с фаршем

Приготовленное блюдо так понравилось всей семье без исключения, что я решил занести его рецепт в «Свои любимые рецепты».

ИНГРЕДИЕНТЫ:

•   фарш — 1,5 кг;
•   картофель — 2 кг;
•   лук репчатый — 2 луковицы;
•   морковь — 1 шт.;
•   чеснок — три зубчика;
•   петрушка, укроп (стебли), тимьян;
•   апельсин — 3 шт.

Картофель режем пополам, удаляем середину (делаем собственно лодку), далее крупно шинкуем вырезанные части картофеля, морковь и лук. Из фарша — с луком, солью и перцем — формируем небольшие котлетки. Картофельные лодочки смазываем подсолнечным маслом, кладем на них фарш.

В середину противня помещаем крупно порезанные овощи и зелень, добавляем немного масла и по периметру укладываем порезанный апельсин. Накрываем все фольгой и ставим на час в разогретую до 180° духовку, затем на 30 минут оставляем без фольги, чтобы получить румяную корочку.

Блюдо получается очень вкусным, красивым и необычным. Всем рекомендую попробовать. Вместо картофеля можно использовать кабачок или баклажан.
